Actually, if it didn't carry the "Taipan" Chinese signage and if I didn't read all the online reviews of it being one of the top Cantonese restaurants in Hong Kong, I would have mistaken The Chairman as a Thai-Chinese restaurant.
Our first few dishes used a lot of spices and herbs that reminded me of Bangkok. I say this without complaint. It was rather refreshing.
The Chairman promises quality, and quality was what we got.
Spicy Ox Tongue in Dark Vinegar and Herbs - fleshy and succulent with the perfect
level of heat to keep things exciting
Pan-Fried Prawn Cakes with Kaffir Lime Leaves
Wild Clams Stir Fried with Chili Jam and Basil - these made my tastebuds go wild
Braised Spareribs with Preserved Plums in Caramelized Black Vinegar - a bit too sweet
for my liking
Oxtail in Port and Cumin - the meat was so tender and the sauce… OHMYGOD THE SAUCE!!!
Fried Rice with Prawns Trio: Fresh Prawns, Sun Dried Prawns, and Shrimp Paste - nice and fluffy
though I didn't taste no shrimp paste
Steamed Fresh Flowery Crab with Aged Shaoxing Wine and Fragrant Chicken Oil
After I took photos, our server started arranging the flat rice noodles onto the plate
The flower crab was plump and moist and sweet and lush and intoxicated with just the right
amount of shaoxing wine. The rich chicken oil gave the whole dish another level of depth.
This is what The Chairman is all about. Simple but fresh, good quality ingredients.
I couldn't get enough of the desserts.
