There are too many ramen shops sprouting left and right in Hong Kong, but Butao Ramen remains to be my favorite.
(And I'm afraid all of Hong Kong's!)
Just look at the queue when I arrived at the site on a weekday lunch.

But guess WHO got lucky and guess WHY she got lucky!

Because she was all alone.
In less than 5 minutes I was seated.
Life is suweeeeeeeeeeeeeeet when you are an old maid. :P
The menu at this branch is very simple. You have only four choices:
Butao King, Black King, Red King and Green King
They give you this order sheet where you tick your preferences.
Don't worry, there's an English version, too!
I had the Butao King and Green King on my last visit. Both were amazing. (See proof here.)

Hello, Butao Black King Ramen!
The soup was a pork bone broth mixed with squid juices. Creamy and velvety and very, very black.
On top was a generous scoop of chopped up squid in more of its ink

Firm noodles that turned a bit soft because it took me forever to finish taking photos. MY BAD.
Now close your eyes and imagine all the elements together...
Maybe one day I'll post that photo of me flashing that big black devilishly delirious smile.
But, until then, go queue up and experience it for yourselves!
I was in and out in 30 minutes.
