In his shop are so many mouthwatering goodies. Cured meats, terrines, pates, jellied meats...
Antipasti, salads, tarts, quiches, hams, cheeses, etc. etc. etc.
The kind (and handsome) Monsieur Verot, The Master Pork Butcher himself,
helped me with my choices
I took home three chunky slabs for my breakfast the next morning.
Pate en croute de canard a l'orange - duck and orange combo is a no-brainer
Pate grand-mère with foie gras, truffle juice and port.
Rich and creamy, this is posh, I tell you!
And my favorite of all, the fromage de tete or "head cheese," which won
Gilles the gold medal in the French national fromage de tete competition.
Soft bits of pig head suspended in a clear and flavorful jelly of meat juices.
Gorgeous texture. Clearly the work of a charcuterie master.
