Solaire boasts that everything they serve at the buffet is fresh, hence the name Fresh, and that "the only thing frozen is the ice cream."

What I ate:
Crabmeat avocado temaki, hamachi (daw) and salmon sashimi
Lobster, king crab legs (so sweet and yummy!), fresh oysters, pickled herring with onions,
crabmeat and mango salad
Brie with walnut, fig and strawberry
Blood orange, blackberries, starfruit, arugula salad with figs, parmesan and pine nuts
Assortment of cheeses and cured meats
That's foie gras inside!
Desserts!
My favorites were the Solaire chocolate cake, churros and choco pistachio cake.
But apparently, my most favorite that night (aside from the king crab legs)
was "the only frozen thing in the buffet!"
Hazelnut, pistachio and chocolate ice creammmmmm…mmmmm…mmmmmmmm…… :)

Overall, I'd say the dinner spread at Fresh was not bad considering its P1,888++ price tag is lower than many other hotel buffets.
Five things I wish Fresh would improve on:
1. Food labels. It would be nice to know what we were eating.
2. Corkage. OMG!!! It was P3,000 per bottle!!! We were almost 40 people eating that night and they wouldn't waive even just one bottle!
3. Coffee or tea. Please just include it already.
4. The Japanese Station. Because it's my favorite station next to dessert. :P
4. The chairs.
They were really heavy, making it difficult to get in and out. Plus the single skinny support
system was not enough to balance our weight
But it was really our fault, because, well, we're all sumo champion heavyweights! :P
(We did NOT dress to match the carpets.)
