It's a super old school Chinese restaurant in the rowdier side of Hong Kong.
It hunts 30 day old baby pigs, debones them but leaving a beautiful layer of fat intact, stuffs the babies with sticky rice, ties them up nicely and tightly, and roasts them slowly but surely.
And then… VOILA!!!
Looks a bit freaky, I know, but wait till you see the cross section!

An outer ring of crispy golden skin, a nice fatty layer of pork corpulence,
and a heavy roll of glutinous rice
My vote still goes to our very own native lechon de leche, but this Chinese version is not bad at all.
I wish the rice were tastier, but nothing a dollop of XO sauce couldn't fix.
Chopped up pig head. The very best part.
Braised Prime Rib of Beef with Lemongrass Gravy. Tender and gooey. Hits my spot.
